Joe Breitbach, a 1971 graduate, was a four-year member of the men's wrestling program. He was an assistant coach with the program from 1971 to 1985. He opened Joe's KnightHawk in March 1975 and has hosted the annual Fight Night wrestling season kickoff event for high school and college wrestling, multiple banquets, and fundraising and other social events for numerous Wartburg teams. Breitbach started Milboy's Army in honor of longtime coach Jim Miller in 1993 to directly support the wrestling program. He has managed the annual Desert Duals wrestling competition hosted in Las Vegas since 2001.

Joe and his wife, Julie, a 1973 Wartburg graduate, received the Wartburg Alumni Citation in 2012 and the Russ Smith Community Impact Award from the National Wrestling Hall of Fame in 2015.

He and Julie live in Waverly and have three adult children who all graduated from Wartburg.
